Try It Tuesday...Salmon your kids will eat

Salmon is one of my all time favorites and I could eat it for breakfast, lunch and dinner.  Last week I came across a new recipe for broiled miso salmon that knocked our socks off. The three things that I love most about this recipe is that 1.It's super easy 2. I used two ingredients that I've never cooked with before and 3. (most importantly) my kids actually wanted to try it and they LOVED it. It's definitely on the menu for this week and we all are looking forward to it. I served it with a simple salad and riced cauliflower.

Friday Favorites...last of March!

My family is big on traditions and while we don't have a lot of them I do make sure to carry through with some of our favorites. One that we always look forward to is having our Easter "eggs brunch casserole" (we have this every Christmas morning as well) for breakfast. Believe me there's nothing healthy about it but my family has been making it for years.  As clean as I try to eat,  I'm not going to be the one to break the tradition because sometimes it's just the little things that make us the happiest and gives us a feel of "home" while we're here in Texas. Hope you are carrying on some traditions of your own this weekend or here's to making new ones. Cheers!

Try It Tuesday...

Who else loves a four day week as much as I do? Knowing that we only have four days of the daily grind made getting up on Monday a little bit easier for me. I'm looking forward to a productive day and making a dent in my to-do list. I have a host of things I've been wanting to share with you to try... so today I decided to link them in one big post.  Hope you all have a terrific Tuesday!

Friday Favorites...Spring Break 2016 wrap up

March Madness is in full swing while our spring break is sadly coming to an end. The highlight of our break was my sister and her family coming to visit. It was five days of soaking up the warm weather and enjoying a lot of R&R which we all desperately needed. We took them to a few of our favorite spots but what we enjoyed the most was the downtime here at the house. Since these times are few and far between anymore, just being together hanging out is what made their trip so special. I hated to see them leave as I'm the happiest when my family is all together. Hope you all had a great week and cheers to the last three days of spring break!

Friday Favorites...Spring Break Starts Now!

I've always looked forward to spring break because it marks the start of warm and sunny days ahead. This year we're staying home and looking forward to having some down time with our family coming into town...also known as 'ritas by the pool if the weather cooperates. All in all it was a slow week around here with my son and I being under the weather. Here's to the weekend and to a week off the grind.  I hope you enjoy my favorites and don't forget to spring forward this weekend...

Friday Favorites...Hello March

After two basketball games, one 5 hour track meet, hours of homework and the proverbial "daily grind" here we go again...TGIF y'all!  Spring was definitely in the air this week which made me want to start organizing and deep cleaning around the house. I started on a few spots and can't wait to really dig in. In spite of all the hustle & bustle this week brought us, we still made time to toast happy birthday to our late Uncle who would have celebrated his 71st birthday this week. There's not a day that goes by that I don't think of him and I miss him terribly. Cheers Walls!

Try It Tuesday... protein smoothie

The party is over. February was a month long celebration and now it's time to get back on the healthy train. I'm a smoothie queen and have at least one everyday. My typical go to for breakfast is this green smoothie and now I'm hooked on this blueberry-banana smoothie for lunch or mid-afternoon snack. Warning: it's super sweet but super delish. Trust me, if it doesn't hook you right away, give it a couple of tries...it is worth it!
Ingredients
3/4 -1 cup of unsweetened almond milk
1 scoop of vanilla protein powder (I use this)
4 oz plain greek yogurt
1 T chia seeds
1 ripe banana
1/2 cup or so of blueberries
*I use frozen blueberries so I don't add ice. If using fresh berries, throw some cubes in yours...
Mix in blender and enjoy with a fun straw!
