Friday Favorites...Last of January

One of my favorite restaurants added a new salad to their menu and I could eat it e v e r y d a y. I met a friend there for lunch this week and enjoyed every bite of it ;)  I'm hoping this one stays around for awhile.  I feel like I always talk about the weather but it's going to be absolutely gorgeous here this weekend. Listen up my midwest crew... I'm talking sunny skies and 70 degrees. Can I get a high five?

Try It Tuesday... Smoothie

Sooooo a friend of mine was raving about this smoothie recipe that she found through her vitamix  recipe book. Of course I had to try it even though I'm not a huge fan of ginger and orange juice. We all know how good ginger is for you so get your blender out and try this healthy, immune boosting smoothie. There's 5 (including ice) ingredients so it's super easy to make. I'm still on the fence but something keeps making me come back to making it. Be sure to leave a comment to let me know what you think of it.
Ingredients
2 small carrots 
4-6 oz orange juice
1/2 " or so of ginger
clementine or orange
ice
I chose to scrape the peel off my ginger but it's optional. Place all ingredients in a blender and enjoy! 



P.S. Drinking with a fun straw makes any drink that much better!

Friday Favorites...

Woohoo! Happy Friday y'all! This has been a long week and I just realized that we have a three day weekend and I can't even begin to tell you how that has changed my mood. All I want to do is lounge around in my favorite sweatpants (which are now on sale, click here or below) and finish watching Making of a Murderer for the next couple of days. Have you seen it? Try It Tuesday...Tacos!

NUTS! Yes, these are walnut tacos and don't snub your nose at them until you try them. I'm a huge fan of mexican food and yoga extraordinaire Kathryn Budig so when she posted her recipe for these I immediately had to make them. Ok...well not immediately but I knew I had to try them in the not so distant future. I made a few minor changes to her recipe to make it my own.
walnut "meat"
1 cup walnuts
1.5 T Bragg liquid amino (soy sauce alternative)
1/4 t garlic powder
1/4 t chili powder
1/4 t paprika
1/4 t cumin
other ingredients
1 lime
spinach
guacamole
nutritional yeast
salsa
hot sauce
tortillas
Place walnut "meat" ingredients in a food processor and pulse a few times to break up the nuts. Voila...there's yo meat. Brown your tortilla's on the stove until they are a touch brown on both sides.  Spread guacamole on your tortilla and add your "meat" and toppings. Dust with nutritional yeast and enjoy!

This recipe makes enough for 4 small tacos and the "meat" is excellent left over. Click here for her full recipe. Just for the record, I am not a vegetarian by any means but do enjoy having meatless options.

Friday Favorites...2016

Getting back into a routine is never an easy proposition...however, shortened school weeks are always a nice way to get back into the daily grind. I wouldn't say that we're back to clicking on all cylinders yet but four days are definitely better than five after an awesome two weeks off. We sure were fortunate enough to have another merry Christmas with family and friends and was sad to see it end. Our New Year's is off to a great start thanks to our sky lanterns and the delish Texas caviar for good luck didn't hurt either. My shoe collection always seems to grow a little this time of year and I am always a sucker for some gray sweats! Again, thanks for reading and Happy New Year y'all...
