There's nothing better than soup to warm the soul during the winter months. It's even better when they are healthy and super easy to throw together. I found two soup recipes on the TIU website and the first one I made was no bueno so I'm not going to mention it but this minestrone recipe with a few changes of my own is...real nice, if you know what I mean (Cousin Eddie Reference for you "non-die hard" Christmas Vacation fans)! Plus, it was my first time experimenting with parsnip and I kinda liked it! Try it and let me know what you think. Click here for their recipe.
Their ingredient list didn't include celery but calls for it in their directions so I went ahead and threw it in the soup. I left out the thyme, used a 28 oz. can of diced tomatoes instead of the 2 cups it called for and added 1 cup of water.
