Tuesday night's are for tacos but it was definitely time to shake the menu up a bit from our usual ground beef variety. When I came across this chicken tortilla soup recipe, I just knew this was the recipe to temporarily displace our Tuesday staple. It was a light recipe with minimal ingredients and looked fairly easy to make. I did take some liberties with the recipe to make it my own and it turned out to be a hit. I used can green chiles instead of dicing up a pepper and used a little less chicken than the recipe called for.
