Try It Tuesday with Spaghetti Squash...

I'll admit it...sometimes  on the daily I stalk Brody Jenner's Instagram account and because of it I have a new dish that my whole family will eat. He posted a picture of his dinner one night and it made my mouth water. He made spaghetti squash with chicken sausage and that sounded like a good idea to me. I winged it since I didn't have a recipe to go by and it has turned out to be one of our favorite meals to make. This is healthy, tasty and has very few ingredients. It was one of those crazy, busy nights and I didn't have much time to get a good shot but give it a try. I'm definitely not a food blogger!
The few ingredients you will need:
1 spaghetti  squash
12 oz. of any sausage you like
avocado oil (or of course you can use olive too)
1 shallot
3 cloves of garlic, minced
salt & pepper
parmesan cheese
Let's do this:
Pre-heat oven to 375
Cut your squash in half, spoon out the seeds and drizzle with oil & salt. 
Oil your cookie sheet and place your squash open side down and cook for 30-40 minutes depending on how big it is.
You will want to shred with a fork after it's finished baking. Click on the video to see how it is done.
When your spaghetti squash is about half way done start heating your sausage (I use a dutch oven so there's room to add the squash making it a one pot meal) with the shallot & garlic. I prefer to break it up into crumbles as we are heating it. So when you have your squash shredded and sausage heated toss together in your pot and add a little more oil of your choice, salt & pepper and stir together. Serve with shredded parmesan cheese on top and enjoy!
