Try It Tuesday...Baked Chicken Tacos

Do you want a recipe that's easy to make and that your family will love? These chicken tacos have been a big hit around here for years and tastes great with a side of guacamole and mexican bean salad. Plus it's always fun to mix up your taco nights with something other than beef tacos! Sometimes I make a double batch and stick the extras in the freezer for a future dinner to have on hand. 
baked chicken tacos
makes 8 tacos
1 T avocado oil
1 sm onion-chopped
1 clove minced garlic
1 lb cooked chicken, shredded
1/4 cup salsa
4 oz cream cheese
1 t ground cumin
1 cup shredded mexican cheese
1 4 oz can green chiles, drained
8 tortillas (soft taco size)
how to
Preheat your oven to 350 degrees
Heat oil in skillet and add your onion and garlic. Cook for a few minutes and then add chicken,salsa,cream cheese and cumin. Cook this mixture until ingredients are well combined and heated through. Add 1/2 cup of cheese and chiles (I only use 1/2 of the 4 oz can) and mix well.
Spoon about 1/3 cup of mixture into your tortilla and roll up. Place seam side down in your 9x13 baking dish. 
Sprinkle with your remaining cheese and bake for 20-25 minutes. 
*you can also add extra salsa on the top of your tortillas before baking 
 After they finish baking we like to doctor up our tacos with sour cream, salsa, guacamole, hot sauce and/or fresh jalapenos!

    Next time you're in a rush just throw the uncooked chicken, cream cheese, and salsa into a crockpot. Pretty much the same end result!

  4. Great dinner! We had it last night, with the bean salad. We have dinner with my parents on Monday. My mom asked me to bring her the recipe and ingredients. My stepdad is home bound on hospice. I think she enjoyed making a new dish. We used rotisserie chicken to save time.
