This ain't your momma's cookie dough yo...
My hubby's chocolate chip cookies are the best ever but obviously not so healthy. You will also find me eating the cookie dough by the spoonful when he's making them so when I came across Maria Baum's healthy cookie dough recipe on Tracy Anderson' blog I didn't hesitate to make it. The first bite was a little strange but once I put it in the fridge to chill for an hour or so and gave it another try it was much better. By day two I was in heaven and didn't stop until the bowl was empty!
The ingredient list is small and it's so easy to make. There weren't any directions with her recipe but this is how I made it. Remember this is only cookie dough...it's not meant for actually making cookies.
healthy cookie dough
1 can/box well rinsed garbanzo beans
1/4 c almond butter
4 T oats
3 T agave nectar
2 t pure vanilla extract
1/4 t sea salt
1/4 t baking soda
1/3 c (or more) dark chocolate chips
Put the first three ingredients in a food processor and mix well.
Then add the remaining ingredients-except for the chips- and mix again.
I transfered my "dough" to a bowl and then stirred in the chocolate chips.
