Tempeh Try It Tuesday...


Tempeh anyone?


I never eat soy but this will be an exception when I'm craving chicken salad. 
The hearty vegan was at my local Whole Foods sampling her Texas Tempeh and Texas Black Eyed Pea Tempeh a couple of weeks ago.
Vegan or not you will be surprised how good this Mock Chicken Salad is using Tempeh.  BTW...it's Mark approved so you know it has to be good!

Super Easy Tempeh Mock Chicken Salad

1 block of Texas Tempeh

2 tsp yellow mustard
2 tsp tamari or soy sauce
1 clove garlic, crushed
2 green onion stalks, chopped
1/2 c Veganaise or other mayonaise
1 pickle, diced
1 celery stalk, diced
2 tbsp fresh parsley, minced



Steam thawed tempeh for 20 minutes or frozen tempeh for 30 minutes then let cool in a large bowl. Cut into 1/2 inch cubes. Mix in all remaining ingredients and chill for two hours.
