Try It Tuesday...

Grilled cheese please!
Try it Tuesday is all about the variety of grilled cheese sandwiches you can experience at your local Whole Foods! Well, we're lucky enough to have a bar that serves a light menu with beer & wine in ours!
This has been on my list of things to do for awhile now...well ever since they opened this past February. I officially crossed it off this weekend and thoroughly enjoyed sinking my teeth into The Lone Star grilled cheese. It wasn't your typical grilled cheese- goat cheese, Kalamata olives, oven roasted tomatoes on sourdough. If that doesn't make your mouth water there are 6 others to choose from. If grilled cheese isn't your cup of tea don't worry there's a few other choices anywhere from a burger to spinach & artichoke dip. 
Yes, I enjoyed a glasss of wine with my lunch and Mark had a beer or two as well. He liked the beer so much that he purchased a growler of it. You buy the growler but you can bring it back and refill it as often as you like.

Operation Patio cleanup...

So it's Wednesday and it's the first day of Spring.
Spring came in like a lion early early as in 2:40 this morning...hail storm, rain, wind.
We really felt like our windows were going to break and all I kept thinking was what in the world am I going to do if the rain comes pouring in here? There is not a piece of plastic big enough around here to cover these windows and the only duct tape around here is zebra print and neon pink...
Maybe I need to go get some storm supplies this week...I would hate to see what a hurricane brings...
Thankfully it passed and the only damage I woke up to was this


Towels, carts, sunscreen, swimsuits, cushions everywhere and two missing chairs...


Oh here they are in the pool...Egads!

Looks like it's operation patio cleanup today to welcome Spring!

Try it Tuesday...

I've been in search of a good mac-n-cheese recipe for quite some time now. The kids used to love when I would make California Pizza Kitchen's recipe but I just came to a point where I couldn't use the Velveeta that it called for anymore.

I came across Nigella's recipe on GMA for mini macaroni & cheese recently and of course I had to try it. It calls for Gruyere, Mascarpone, Mozzarella & Parmesan which are some of my favorite cheeses. It was a little runny...should have let it cook longer but the troops were hungry around here! Or maybe I didn't let it set long enough after it was finished cooking. Who knows...but I do know that I will give it another shot.

Try It Tuesday...

Try it Tuesday went down with Art Smith's Unfried Chicken.
Art Smith is the executive chef of LYFE Kitchen restaurants and my mom pulled out the recipe from a magazine when she was here a few weeks ago.

Here's a pic of this spicy little dish


Warning: this chicken is SPICY. I followed the directions to a T and all of our mouths were on fire! I like spicy and it was too much for me. If you need to open your sinuses make this as the recipe calls. If you want to enjoy healthy unfried chicken the traditional way, lessen the amount of the black and cayenne pepper.
This is a great dish to make ahead during the day. I marinated the chicken in the afternoon and also combined the bread crumb mixture ahead as well. When dinner time rolled around I just shake and baked!

Here we go:
Southern Oven Unfried Chicken
Serves 4-6

1 c buttermilk
1 tbsp. hot sauce
4 skinless, boneless chicken breasts
1 1/2 cups whole wheat or regular panko break crumbs
3 tbsp. Parmesan cheese
1 1/2 tsp. onion powder
1 1/2 garlic powder
2 tsp black pepper
1 tsp cayenne pepper
1 tsp paprika
olive oil spray

Preheat oven to 400 degrees
In a bowl, combine buttermilk and hot sauce. Add chicken and allow it to marinate in the fridge for at least an hour.
Combine the dry ingredients in a self-sealing, gallon size plastic bag.
Remove chicken from marinade and place in bag. Shake well until chicken is evenly coated. Lay chicken on a lightly oiled baking sheet and chill uncovered for 30 minutes. Lightly coat with spray oil.
Bake 15-20 minutes, turn over and bake 15-20 minutes more or until done!

Super easy, healthy and great for busy nights!

Try it Tuesday...

It's Tuesday and the kids tried Orzo Stuffed Peppers. This wasn't the first time for Mark & I as I have made them before but the kids wouldn't have anything to do with them.
Tonight was different (or was it...do you count bribing with Oreos?) and they actually liked them...the orzo better than the peppers.


If you're in the market for some new, healthy recipes to tempt your taste buds
here's the skinny 

1 C dry orzo (I used whole wheat)
3 C baby arugula or spinach (I used spinach)
1/4 C crumbled feta cheese
1 T olive oil
3 large bell peppers, halved & seeded

Preheat oven to 400 degrees

Cook orzo according to package directions in salted water; drain. Return to pot and add above ingredients plus 1/4 tspn each salt & pepper; stir.

Season inside of peppers w/salt & pepper. Fill peppers and transfer to a 9x13 baking dish. Cover with foil and bake until peppers are tender (35-40 minutes)

Super easy and can make ahead!

Miss these faces...

Last Thursday I made an executive decision to fly back home for a little birthday celebration for Uncle Wally...hello Walls

Couldn't have made a better decision to fly by the seat of my pants, go home, break some bread, sip some wine and enjoy my family for 24 hours. I escaped the bitter cold and managed to get back to Katy in time to catch 3-Spartan baseball games to finalize my weekend. 

Last week before Spring Break and there is lots to do round this joint. Hope you had a great weekend.
