How to not catch a gator...

Jack has been wanting to go fishing for awhile...and I think today we found out that Mark isn't a professional angler. Ryan might be but Mark not so much.

Houston we have a problem...

Starting the week off with a few technical difficulties. Not quite as serious as Jordyn Weiber not qualifying for the Women's gymnastics all-around last night but pretty serious...

We came home Saturday night to a hot hot house. I went to check the temperature and our control panel was completely blank. This happened last August-August 11th to be exact because I kept the paperwork from when they were here. Love how major household malfunctions seem to occur during the weekends.

At least the kids are cool as cucumbers since the upstairs A/C is working just fine.  Yes, we could have slept up there but we thought this would be good preparation for hurricane season if we toughed it out downstairs.
Here's to a good week. Send cool thoughts this way just in case A/C doesn't get fixed today and Jack starts football practice this week.

This time last week I was on my way to the airport to pick up

Little did I know that when she called last Thursday night at 9:30 she had 4 days off and needed a vacay! I said come on down - she bought her ticket and
we had the best weekend. We shopped, took some FUN party pics, and just enjoyed some much needed R & R. Love this girl.

We're starting our weekend off with going to Jack's camp celebration at Pinecove. Can't wait to see what he's been up to all week!

Adding zing in your bite...

I have been making a real effort to actually make some of the recipes that I find on pinterest. Summer is a good time to try these new finds on my family that way when school starts I'll know what works and what doesn't.

A few weeks back I re-pinned a recipe for no-bake energy bites and here's what Ryan had to say about them!

They are really simple to make and here's how:


1 c dry oatmeal (old fashioned oats)
1 c toasted coconut flakes
1/2 c chocolate chips
1/2 c peanut butter (also can use almond/sunflower butter)
1/2 c ground flaxseed
1/2 c honey (don't use agave nectar-it won't stick together as well)
1 tsp. vanilla

Stir all ingredients together until mixed. Chill in fridge for about 30 minutes. Remove and form into balls. I used a cookie scoop to form mine and it made around 20. Store in a container and keep refrigerated.

40th birthday wrap up...

I just poured my second cup of coffee trying to still wake up from our relaxing weekend at the JW Marriott in San Antonio

We're back home-actually drove back this morning so we could enjoy Sunday Funday at the resort. That was a good move since Mark was sick Friday and most of Saturday. I'm hoping that he isn't sick next year on his birthday...the last two years his birthday hasn't been so good to him.

We didn't make it to SeaWorld like we had planned but don't worry memories were still made. 

 Yesterday at this time I was laying poolside with a fancy cocktail in my hand and now I'm sitting here overwhelmed by thoughts of laundry, mail, and what to make for dinner.
Back to reality...

Dinner suggestions would be greatly appreciated!

Lemons + Jello =

Check out how beautiful these are...

My neighbor took the jell-o shot to a whole new level on the 4th of July.
Chris's classier version of the jell-o shot from Pinterest.

Here's how:

Cut your lemons in half and hollow them out
(She said this was the hardest part) 

Mix your jell-o shot which is:
1 cup hot water, 1 box of jello, 1 cup liquor

Stir until dissolved 

Add the mixture to your lemons and refrigerate for about 3 hours

Once solid, slice and serve!

Leave out the liquor and you can make these for kids too!

How to cut the perfect lime/lemon wedge

I probably should have posted this at the start of summer but I guess it's never too late to know how to cut the perfect citrus wedge. 

If you want to be the hostess with the mostest at your next happy hour then follow these simple steps to topping off your favorite summer drink.

Cut like a we go...

I will be demonstrating with a lime.

1. Cut the ends off 
Make sure to cut both ends

2.  Easily stand lime up on one end and slice down the middle
You will now have two halves

3. Score (cut down the long axis of each half just a touch)

This allows for easy placement of your wedge on the glass edge

4. Place cut side on board and slice into wedges

5. Place wedge on glass and fill with your favorite drink

Bear with me as having started this blog 6 years ago I am a little rusty but excited to dive a little deeper into this blogger world!

I'm usually on top of my nail polish...coordinating it with holidays, etc but just couldn't get it done for today! So here is some fantastic nail art I've seen around town that I wanted to share.  I'll be sure to keep these ideas to show my support for the Olympics and also for Labor Day!

Summer Soup!

 Thanks to my Aunt Dee I have a delicious super EASY tomato soup to add to my soup repertoire. Yes it was a balmy 90 something degrees outside this past weekend but cool enough inside to eat!

9 Roma tomatoes
1/2 & 1/2 (or heavy cream)
Chicken broth 
Salt & Pepper

Preheat oven to 375 degrees
Cut your tomatoes long ways and put skin side down on a baking sheet.
Sprinkle with salt and pepper and drizzle your EVOO on them

Be careful with the pepper-I put a little too much on mine and my soup was a little spicier than I like

Roast until they start talking to you and  become really juicy
(about 30-40 minutes)

Put your tomatoes in a blender-be sure to scrape all of your roasted goodness in there from the pan.
I used 1/2 & 1/2 but if you like more of a bisque soup then use heavy whipping cream. Just pour a little in at a time until you get the consistency that you like. I also added a little chicken broth in to make it a little lighter. 

Blend away

This made about 5 cups of soup.
